Foie gras is made by force-feeding ducks or geese (a process called gavage) a rich diet of corn, causing their livers to swell to many times their normal size, becoming fatty and flavorful. This involves inserting a pipe down the bird's throat several times a day to deliver food, leading to abnormal fat storage and greatly enlarged livers, which are harvested after the birds are slaughtered.
The Process of Gavage:
Confining the Birds: Ducks and geese are kept in small cages or pens, limiting movement.
Force-Feeding (Gavage): A long pipe is inserted into the bird's esophagus, delivering a large amount of corn mash or grain mixture.
Liver Enlargement: The birds' livers cannot process the excessive fat, causing them to store it abnormally, growing up to 10 times their normal size.
Slaughter & Harvest: After several weeks of force-feeding, the birds are slaughtered, and their enlarged livers are removed for sale.
