“Mafalda” è la più antica larderia di Colonnata, dal 1930, quando il “lardo” era solo il companatico povero dei cavatori. Anche per il lardo di Colonnata bisogna sempre identificare il produttore perché ogni produttore ha un suo personale utilizzo e quantitativo di ingredienti per la lavorazione e la stagionatura del prodotto . La nostra è fatta di regole irrinunciabili e consolidate da quattro generazioni. Nel 2003 “Mafalda” ottiene la certificazione IGP ed il bollo CEE che certificano la qualità delle materie prime, la particolarità della lavorazione e l’originalità del prodotto frutto della cultura millenaria dei cavatori delle cave di marmo di Carrara che hanno saputo conservare intatto il legame con la natura e preservare la sapienza antica dell’uso delle erbe aromatiche, delle spezie e dei giusti tempi di maturazione.
